Day 20: Rocky Road Ice-cream

Thanks to my friend, Bernadette, for suggesting Rocky Road Ice-cream. She made a delicious version for our NYE dessert. This version uses neopolitan ice-cream, as the kids love all the flavours. A perfect summer treat for kids (and adults) of all ages.


Ingredients

  • 20g (1/4 cup) shredded coconut
  • 8 scoops neopolitan ice-cream
  • 2 x 55g Turkish delight, chopped
  • 30g baby marshmallows
  • 40g unsalted roasted peanuts, chopped (or unsalted roasted pistachios or sugar-dusted almonds)
  • Chocolate Ice Magic, to serve
  • Waffle basket to serve


Method


Wait for the ice-cream to soften, so that it can be spooned into a mixing bowl (not quite soup-like, but scoopable).

Mix in all the ingredients and stir so they distribute evenly. Swirl in some Chocolate Ice Magic for lovely chocolate layers within the ice-cream. Don't mix it too much - you want to keep the swirling patterns.

Place the bowl in the freezer - covered with gladwrap. Make sure it freezes, but doesn't go rock hard.

When it is time for desert, serve the ice-cream into a waffle basket. Cover with Chocolate Ice Magic or chocolate sauce. Sprinkle with coconut.

    How easy is this to put together ... and yet, everyone really likes it. A useful addition is using lightly sugared almonds instead of peanuts. Yum! Looks great ... and the kids say it tastes great too.
