French Toast (or Bombay Toast) as my dad used to call it is a perfect Sunday breakfast. In this recipe, we use a rustic Italian loaf and caramelise the banana. Delicious!
Ingredients (per person):
Italian bread - a rustic loaf that is preferably 2 days old. Cut into two thick slices per person.
1 banana (per person)
2 eggs
1 teaspoon Vanilla Essence
1 dash of milk (soya or cows)
Olive oil
Fresh maple syrup
Method
Create the French toast or Bombay toast mixture by combining the eggs, vanilla essence and milk together in a bowl and whisking them with a fork.
Add olive oil into a frying pan and put on high.
Dip the thick slices of Italian bread into the mixture and soak into each side of the bread. Not too much that the bread falls apart.
Toss the bread into the frying pan and fry each side until browned and the inside is cooked.
At the same time, slice a banana into half (or segements) and fry in the same pan. Fry it until the banana is browned and caramelises.
Serve the French toast and banana on a large plate. Drizzle with fresh maple syrup.

Aaahhh... Bombay toast... thank you for this recipe, it is truly inspiring. I'm going to make it tomorrow for my breakfast as I have rustic Italian bread on hand x

I love to add maple syrup but you can add honey ect.
